Our Malbec Blend, as many of you know was a great beginning for Blue Sky Bistro to personally source grapes and create a wine that was turned out to be a great success. We did sell out quickly and we are hoarding the last few bottles in our private cellar. It saddens me that it went so fast and yet it inspires us to move forward into a new adventure for a new red blend. we are looking forward to collaborating with with Jeff Branco and Rotta Winery in the creation of the next BIG THING.

Viognier Blend “VOLADO” by Oso Libre -Wine of the Month Paso Robles N.Vineyard Dr
A blend of Viognier 50%, Roussanne 32% & Marsanne 18%
Roussanne and Marsanne are French varietals and have more mineral and drier characteristics
Is a crisp & dry style of Viognier. We suggest it with Steamed Clams, Linquini & Clams, Chicken or Salmon Picatta or Clam Chowder.
James Wilkens Vineyards Primativo -Wine of the Month Paso Robles Creston area
This is the Italian version of Zinfandel. This 2012 is 100% Primitivo and only a true expert will argue over whether it is a Zinfandel or not. Wine enthusiasts proclaim it as the “grandfather” of Zinfandel and that the grape and originates from the south of Italy. James Wilkins Vineyards are located in Creston at the edge of Paso Robles with 124 acres of vineyards.It is full bodied with great balance and character with jammy fruit, cherries, spice and has a smooth finish It is good with Fruit and Cheese plate, red meat, pasta and is a nice drinkable wine alone.

Opolo Viognier Paso Robles north Vineyard Dr. Paso Robles
Very drinkable with or without food. Fruit forward but subtle and crisp. By the glass or the bottle.
Sauvignon Blanc by Le Vigne Paso Robles
Crisp with a light complexity and very refreshing. Available by the glass or the bottle.
James Wilkins Cuvee 24
James Wilkins also has the Cuvee Red Blend. This is Primativo and Syrah (Mostly Primativo)
Again, the features are similar to the Primitivo and it is an interesting hearty wine to be paired with Red meat, chicken or spicy dishes and pasta.
